Ingredients

Dough:

  • Water: ⅓ cup (84g)
  • Milk: ½ cup (123ml)
  • Instant Yeast: 1 tbsp + 1 tsp (11g)
  • Eggs: 1 large egg
  • Vanilla Extract: 2 tbsp (30ml)
  • All-Purpose Flour: 3⅓ cups (450g)
  • Salt: 1 tsp (5g)
  • Sugar: ¼ cup (50g)
  • Butter (Room Temperature): ¼ cup + 2 tbsp (85g)
  • Orange Zest: Zest of 1 orange

Cinnamon Filling:

  • Brown Sugar: 1 cup
  • Cinnamon: 3 tsp
  • Maple Syrup: ¼ cup
  • Melted Butter: ¼ cup
  • Orange Juice: ¼ cup
  • Vanilla Paste: 1 tbsp
  • Chopped Pecans: 1 cup

Orange Glaze:

  • Orange Juice & Zest: ½ cup
  • Icing Sugar: 2 cups

Procedure

1. Prepare the Dough

  1. In a bowl, mix together water, milk, and instant yeast. Set aside for 15 minutes until the yeast begins to bubble.
  2. Add the egg and vanilla extract to the yeast mixture.
  3. In a separate bowl, combine the flour, salt, and orange zest.
  4. Gradually add the flour mixture to the wet mixture and knead until a shaggy dough forms.
  5. Add the butter and continue kneading until the dough becomes smooth and elastic (about 10 minutes).
  6. Place the dough in a greased bowl, cover, and let it rise in a warm place for 2 hours, or until doubled in size.

2. Make the Cinnamon Filling

  1. In a small bowl, mix together brown sugar, cinnamon, maple syrup, melted butter, orange juice, vanilla paste, and chopped pecans. Stir until a paste forms. Set aside.

3. Assemble the Loaf

  1. Lightly flour a countertop and roll the dough into a 9x13” rectangle (same size as a half-sheet pan).
  2. Spread the cinnamon filling evenly over the rolled-out dough.
  3. Roll the dough tightly into a log shape.

4. Prepare the Loaf Pan

  1. Grease a Crown Cookware 10"x4"x4” loaf pan and line it with parchment paper.
  2. Place the rolled dough seam-side down into the prepared loaf pan.

5. Proof the Dough

  1. Cover the loaf pan with a damp tea towel or plastic wrap.
  2. Let the dough proof for 2-3 hours until it has doubled in size.

6. Bake

  1. Preheat your oven to 375°F (190°C).
  2. Brush the top of the dough with egg wash for a golden crust.
  3. Bake for 45 minutes, or until the loaf is golden brown and cooked through.

7. Cool and Glaze

  1. Let the loaf cool in the pan for 40 minutes before transferring it to a cooling rack.
  2. For the glaze, mix orange juice, zest, and icing sugar until smooth. Drizzle the glaze over the cooled loaf.
  3. For extra flavor and texture, sprinkle roasted pecans on top of the glaze.
